Even though kitchen employees may not come into direct contact with guests, their responsibilities are key to the Cafe’s success. At Hard Rock, heart-of-house employees will be considered all-around culinary employees.
A minimum of 1–3 years of experience in a professional hotel or restaurant kitchen is typically required. Some positions may require up to 5 years for specialized roles.
A high school diploma or equivalent.
A certificate or diploma in Culinary Arts, Commercial Food Preparation, or a related field from a recognized institution
A valid Food Handler’s Certificate is essential.
Knowledge of food safety, and proficiency in various cooking methods.
Work every station in the kitchen:Inside and Outside Expo, Grill, Sandwich/Pasta, Salad, Appetizer/Fry and Dessert
Prepare food items by using and following standardized recipes.
Read items as they appear on the Kitchen Display System (KDS) monitors.
Assemble all plates and add additional items required, according to presentation guidelines.
Inform inside expediter of any item that does not meet HRC spec requirements.
Complete all closing duties, closing check-list, replacing all utensils, and making sure the HOH is ready to open the next day for a successful shift. Etc.
