A meat processor in a restaurant plays a vital role in ensuring that meat products are prepared, portioned, and stored properly to meet both culinary and safety standards.
Must be:
17 and older
Willing to learn and execute tasks efficiently
Physical stamina and attention to detail
Receiving and Inspecting Meat Deliveries
Verify the quality and quantity of meat upon arrival.
Ensure meat meets health and safety standards.
Report any spoilage or discrepancies.
Butchering and Fabrication
Break down primal cuts (e.g., loin, rib, round) into usable portions (training will be provided on how to do so)
Trim fat and bone according to menu specifications
Create specific cuts (steaks, chops, roasts) as required (training will be provided on how to do so)
Portioning and Packaging
Accurately portion meat to reduce waste and ensure consistency
Vacuum-seal or wrap meat for storage or sous-vide cooking
Label products with date, cut, and weight for inventory control
Inventory Management
Track meat usage and report inventory levels
Rotate stock using FIFO (First In, First Out) method to minimize spoilage
Sanitation and Safety
Maintain the cleanliness of work areas, tools, and equipment
Follow food safety protocols to prevent cross-contamination
Wear proper protective gear and handle sharp tools safely
Supporting Culinary Operations
Ensure meat cuts align with menu needs by working with branch managers
Assist during prep shifts or in emergencies with cutting or grinding meat
Suggest more efficient or cost-effective cutting techniques
